Ingredients
- 1 1/2 c. shortening
- 3 c. sugar
- 6 eggs, well beaten
- 1 1/2 c. milk
- 1/4 tsp. grated lemon rind (the white)
- 2 Tbsp. lemon juice
- 4 1/2 c. flour
- 4 1/2 tsp. baking powder
- 3/4 tsp. salt
- Glaze (see below)
Directions

1Spray and flour two 9 x 5-inch or 6 mini loaf pans.

2Cream shortening and sugar.

3Beat in eggs.

4Add milk, rind and juice. Mix flour with baking powder and salt.

5Slowly add to batter.

6Mix well.

7Pour into pans.

8Bake at 350° for 1 1/4 hours until lightly browned (do toothpick test).

9Cool 10 minutes.

10Remove from pans. Glaze.
