- 1 c. sugar
- 3 eggs, separated
- juice and rind of lemon
- 1 1/2 tsp. Knox gelatine
Directions

1Soak gelatine in small amount of water.

2In double boiler, cook sugar, egg yolks, juice and rind of lemon until it coats the spoon (custard, 10 minutes and stir).

3Add gelatine; take from heat. Cool slightly.

4Fold in beaten egg whites.

5Pour in sherbets. Makes 5 plus.
