  • 1/2 c. flour
  • 1 1/4 c. sugar
  • 1 c. boiling water
  • 1/3 c. milk
  • 3 egg yolks, beaten with 1 egg white
  • 1/2 lb. butter
  • 2 lemons (1/4 cup lemon juice and zest of 1 lemon)
  • 1 9-inch pie shell, baked
  • 2 egg whites
  • 1/2 tsp. cream of tartar
  • 4 tsp. sugar

    Mix flour and 1 1/4 cup sugar in pan, add boiling water and stir constantly. Add milk; cook until thickened. Add beaten eggs, stir and cook until thick. Add butter, lemon juice and lemon zest. Cool.
