Lemon Meringue Pie

- 1/2 c. plus 1 Tbsp. flour
- 1 1/2 c. sugar
- 1 2/3 c. water
- 1 1/2 Tbsp. butter
- 3 egg yolks, beaten
- 1/3 c. lemon juice
- 2 Tbsp. grated lemon rind
- 1 baked 10-inch pie shell
- 3 egg whites
- 3 Tbsp. sugar
Directions

1Combine flour, 1 1/2 cups sugar, water and butter in saucepan. Cook until thickened, stirring constantly.

2Add beaten egg yolks. Cook for 4 minutes longer, stirring constantly.

3Stir in lemon juice and lemon rind.

4Let stand until cooled completely.

5Pour into pie shell.

6Beat egg whites in mixer bowl until soft peaks form.

7Add 3 tablespoons sugar gradually, beating until stiff peaks form.

8Spread over top of pie, sealing to edge.

9Bake at 400° until browned.

10Yield: 8 servings.
