Lemon Meringue Pie

- 1 1/4 c. sugar
- 6 Tbsp. cornstarch
- 2 c. water
- 1/3 c. lemon juice
- 3 egg yolks (reserve whites)
- 3 Tbsp. butter
- 1 1/2 tsp. lemon extract
- 2 Tbsp. vinegar
- 1 baked 9 or 10-inch pie shell
Directions

1Mix sugar and cornstarch together in top of double boiler. Add 2 cups water.

2Combine egg yolks with lemon juice and beat. Add to sugar mixture.

3Cook until thick.

4Add lemon extract and vinegar.

5Stir thoroughly, pour into pie shell and let cool. Cover with Never Fail Meringue.

6Bake 10 minutes at 350°.
