- 1/2 c. flour
- 1 1/4 c. granulated sugar
- 1 c. boiling water
- 1/3 c. milk
- 2 large size eggs (yolks)
- 1/2 Tbsp. butter
- 1/4 c. lemon juice (2 lemons)
- grated rind of 1 lemon
- 1 (9-inch) cooked pie shell
- egg whites (may need 3)
- 6 Tbsp. sugar
- 1/4 tsp. cream of tartar
- 1/2 tsp. lemon juice or vanilla
Directions

1On stove, combine flour and sugar, then add boiling water, stirring constantly.

2Add milk and cook until mixture thickens, stirring often.

3Separate eggs, saving whites for meringue.

4Add one yolk at a time, stirring until mixture is thick and sheets from spoon.

5Add butter, lemon juice and rind; stir, then after cool, pour into baked pie shell.
