- 2 lb. new red potatoes
- 1/4 c. + 2 Tbsp. lemon juice
- 1 1/2 tsp. dried oregano
- 1 tsp. grated lemon peel
- 1 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1/2 c. olive oil
Directions

1Position rack in center of oven and preheat to 375°.

2Lightly oil large, shallow baking dish.

3Add potatoes to dish.

4Mix lemon juice, oregano, lemon peel, salt and pepper in bowl.

5Whisk in oil. Pour over potatoes; toss well.

6Bake until potatoes are golden brown and knife pierces center easily, turning every 10 minutes, for about 1 hour.

7Adjust seasoning.
