Ingredients
- 2 1/2 c. flour
- 1 c. sugar
- 3 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. water
- 1/3 c. melted shortening
- 2 eggs, beaten
- 1 1/2 Tbsp. grated lemon
- 1/2 c. fresh lemon juice
- 1/2 c. chopped nuts
- 1/2 c. raisins
Directions

1In a large bowl, sift together dry ingredients.

2Combine water, shortening, egg, lemon peel and juice.

3Add to flour mixture.

4Stir just until blended.

5Stir in nuts and raisins. Pour in a greased 9 x 5 x 3-inch loaf pan.

6Bake in 350° oven for 1 hour and 15 minutes or until toothpick inserted in center comes out clean.

7Cool 10 minutes.

8Remove from pan.

9Cool on wire rack. Refrigerate and use as desired.

10Makes 1 loaf.
