Lemon Nut Bread

Ingredients

  • 2 1/2 c. flour
  • 1 c. sugar
  • 3 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. water
  • 1/3 c. melted shortening
  • 2 eggs, beaten
  • 1 1/2 Tbsp. grated lemon
  • 1/2 c. fresh lemon juice
  • 1/2 c. chopped nuts
  • 1/2 c. raisins

Directions

    In a large bowl, sift together dry ingredients.

    Combine water, shortening, egg, lemon peel and juice.

    Add to flour mixture.

    Stir just until blended.

    Stir in nuts and raisins. Pour in a greased 9 x 5 x 3-inch loaf pan.

    Bake in 350° oven for 1 hour and 15 minutes or until toothpick inserted in center comes out clean.

    Cool 10 minutes.

    Remove from pan.

    Cool on wire rack. Refrigerate and use as desired.
