- 2 c. butter or margarine, softened
- 1 c. sugar
- 2 c. flour
- 3 c. oats (any kind)
- 1 Tbsp. grated lemon peel
- 1 tsp. vanilla
- powdered sugar
Directions

1Beat butter until creamy.

2Add next 5 ingredients; mix well. Cover and chill 30 minutes.

3Heat oven to 350° and remove dough from fridge.

4Shape into 1 inch balls.

5Place balls on cookie sheet and flatten with bottom of glass dipped in powdered sugar.

6Bake 12 to 15 minutes, until edges are light golden brown.

7Cool one minute on sheet, then transfer to wire rack and cool completely.

8Makes about 4 1/2 dozen.
