  • 3 lg. eggs, seperated
  • 1/4 cup all purpose flour
  • 3/4 cup low fat cottage cheese
  • 1/4 cup unsalted butter
  • 2 tsp. sugar
  • 1/4 tsp. salt
  • 1 tsp. lemon zest
  • Confectioners' sugar

Directions

    In a large bowl combine egg yolks, flour, cottage cheese, butter, sugar, salt and lemon zest.

    In seperate bowl, beat egg whites until soft peaks form.

    Fold egg whites into batter until blended.

    Heat griddle and coat with thin layer of vegetable oil.

    Pour about 1/4 c. of batter into skillet and cook until bubbles cover entire pancake, and then turn, and cook until lightly browned on other side.

    Sprinkle with confectioners' sugar if desired and serve with warm syrup.
