- 3 lg. eggs, seperated
- 1/4 cup all purpose flour
- 3/4 cup low fat cottage cheese
- 1/4 cup unsalted butter
- 2 tsp. sugar
- 1/4 tsp. salt
- 1 tsp. lemon zest
- Confectioners' sugar
Directions

1In a large bowl combine egg yolks, flour, cottage cheese, butter, sugar, salt and lemon zest.

2In seperate bowl, beat egg whites until soft peaks form.

3Fold egg whites into batter until blended.

4Heat griddle and coat with thin layer of vegetable oil.

5Pour about 1/4 c. of batter into skillet and cook until bubbles cover entire pancake, and then turn, and cook until lightly browned on other side.

6Sprinkle with confectioners' sugar if desired and serve with warm syrup.
