Lemon Parsley Rice

- 1 cup rice
- 1/4 cup finely chopped parsley
- Juice of half a lemon
- 2 tablespoons butter
- Salt & pepper
Directions

1Heat 2 cups of water to a boil and stir in rice.

2Return to a boil, cover and reduce heat to low.

3Cook for 20 minutes.

4Remove lid and fluff rice with a fork.

5Toss in parsley, lemon and butter.

6Season and serve.
