- 3/4 c. oleo
- 1 1/2 c. sugar
- 3 eggs
- 2 1/4 c. all-purpose flour
- 1 tsp. grated lemon rind
- 1/4 tsp. soda
- 1/4 tsp. salt
- 3/4 c. buttermilk
- 3/4 c. chopped pecans
Directions

1Cream the butter and sugar well. Add eggs, one at a time, beating well after each.

2Combine flour, soda and salt.

3Add to creamed mixture alternately with buttermilk, beginning and ending with flour.

4Stir in pecans and lemon peel.

5Pour into greased and floured loaf pans and bake at 350° for approximately 1 to 1 1/4 hours.
