- 1 (6 oz.) or 2 (3 oz.) boxes lemon Jell-O
- 1 tsp. salt
- 2 1/2 c. boiling water
- 1 (16 oz.) can crushed pineapple with juice
- 2 Tbsp. lemon juice or white vinegar
- 2 c. coarsely grated carrots
- 2/3 c. chopped pecans
Directions

1Prepare Jell-O with boiling water and salt.

2Add all remaining ingredients.

3Chill for 1/2 hour.

4Stir and place in mold.

5Let set in refrigerator for 24 hours.
