  • 1 (6 oz.) or 2 (3 oz.) boxes lemon Jell-O
  • 1 tsp. salt
  • 2 1/2 c. boiling water
  • 1 (16 oz.) can crushed pineapple with juice
  • 2 Tbsp. lemon juice or white vinegar
  • 2 c. coarsely grated carrots
  • 2/3 c. chopped pecans

Directions

    Prepare Jell-O with boiling water and salt.

    Add all remaining ingredients.

    Chill for 1/2 hour.

    Stir and place in mold.

    Let set in refrigerator for 24 hours.
