- 1 lemon
- 2 Tbsp.(heaping) cornstarch
- 1 c. sugar
- 2 eggs, separated
- 2 c. boiling water
- baked pie shell
- 4 Tbsp. sugar
Directions

1Grate the lemon and squeeze juice.

2Mix sugar with the cornstarch.

3Add grated lemon rind and juice.

4Stir in beaten egg yolks.

5Add boiling water gradually, stirring constantly.

6Cook over medium heat 2-3 minutes, stirring constantly.

7Pour into pie shell.

8Cover with meringue made from the stiffly beaten egg whites and 4 Tbsp. sugar.

9Seal to edge.

10Bake in 350° oven for 12-15 minutes or till golden.
