  • 1 c. sugar
  • 3 Tbsp. cornstarch
  • 1 c. boiling water
  • 1 tsp. butter
  • 2 egg yolks
  • juice and grated rind of 1 lemon
  • 2 egg whites (for meringue)

Directions

    In double boiler, mix cornstarch and sugar; add boiling water slowly, stirring constantly.

    Cook until clear.

    Add butter, beaten yolks, lemon juice and rind.

    Cook until thick.

    Pour into baked pie shell; cover with meringue and bake 15 minutes at 350° or until browned.
