- 1 c. sugar
- 3 Tbsp. cornstarch
- 1 c. boiling water
- 1 tsp. butter
- 2 egg yolks
- juice and grated rind of 1 lemon
- 2 egg whites (for meringue)
Directions

1In double boiler, mix cornstarch and sugar; add boiling water slowly, stirring constantly.

2Cook until clear.

3Add butter, beaten yolks, lemon juice and rind.

4Cook until thick.

5Pour into baked pie shell; cover with meringue and bake 15 minutes at 350° or until browned.
