- 1 1/4 c. sugar
- 6 Tbsp. cornstarch
- 2 c. water
- 1/3 c. lemon juice
- 3 eggs, separated
- 3 Tbsp. butter
- 1 1/2 tsp. lemon flavoring
- 2 tsp. vinegar
Directions

1Mix sugar and cornstarch together in top of double boiler. Add water.

2Combine egg yolks with juice.

3Beat.

4Add to rest of mixture and cook until thick over boiling water for 25 minutes. (This does away with starch taste.)

5Now add lemon flavoring, butter and vinegar.

6Stir thoroughly.

7Pour into a deep 9-inch baked pie shell and let cool.

8Cover with meringue and brown.
