- 3 Tbsp. cornstarch
- 1 1/4 c. sugar
- 1/4 c. lemon juice (1 lemon)
- 1 Tbsp. grated lemon rind
- 3 eggs, separated
- 1 1/2 c. boiling water
- baked pie crust
- 4 to 6 Tbsp. sugar
Directions

1Combine cornstarch, 1 1/4 cups sugar, lemon juice and rind. Add egg yolks and mix together. Gradually add boiling water.

2Heat to boiling over direct heat, then boil gently for 4 minutes, stirring constantly.

3Pour into baked crust.

4Beat egg whites until a little stiff.

5Add a pinch of cream of tartar. Continue beating until stiff. Add 4 to 6 tablespoons sugar.

6Spread on pie. Bake at 350° until brown.
