Lemon Pie

- 3 lemons
- 1 1/4 c. sugar
- 6 Tbsp. cornstarch
- 4 eggs
- 3 1/2 to 4 c. water (boiling)
Directions

1Grate 3 lemon rinds.

2Scrape side of grater.

3Use 1/2 cup water to wash side of grater.

4Separate yolk and white from eggs. Add egg yolks, cornstarch, sugar and water to rind mixture.

5Cook until thick.

6If not thick enough, mix cornstarch and water; add to mixture to thicken.

7Pour into 2 baked pie shells.

8Beat egg whites until stiff.

9Put on pies to make meringue.

10Put in oven to brown meringue.

11Bake at 350°.

12Makes 2 pies.
