- 2 lemons
- 1 3/4 c. sugar
- 4 eggs
- 2 tsp. grated lemon rind

1Prepare dough for 2 pie crusts.

2Grate lemons to make 2 teaspoons lemon rind.

3Peel the lemons, removing all the white, then slice lemons as thin as possible.

4Take all the seeds out. Add sugar.

5Mix the lemons and sugar; let stand 20 minutes.

6Beat eggs well.

7Stir eggs into the lemon mixture.

8Pour lemon mixture into pie shell.

9Put top crust on.

10Cut slits in top and bake at 400° for 40 minutes.

11Very tangy and like lemon custard pie.
