- 1 1/2 c. sugar
- 1 1/2 c. water
- 1/3 c. cornstarch
- 3 egg yolks
- 3 Tbsp. butter
- 1/4 c. lemon juice
- 1 Tbsp. grated rind
Directions

1Mix sugar and cornstarch in saucepan.

2Gradually stir in water.

3Cook on medium heat.

4Boil 1 minute slowly.

5Stir in at least 1/2 the hot mixture into beaten egg yolks.

6Then blend into the balance of hot mixture.

7Boil 1 minutes longer, stirring constantly.

8Remove from heat

9and add butter, lemon juice and rind.

10Pour into baked pie shell and cover with meringue.
