- 9-inch baked pastry shell
- 1 1/2 c. sugar
- 4 tsp. all-purpose flour
- 4 tsp. cornstarch
- 1/2 tsp. salt
- 2 c. boiling water
- 4 egg yolks
- 1/3 c. lemon juice
- 2 lemons, grate rind
- 4 egg whites for meringue
Directions

1Mix sugar, flour, cornstarch and salt together.

2Add to boiling water, stirring constantly and cook over low heat until mixture is thickened and transparent in color.

3Add beaten egg yolks; stir well.

4Remove from heat; add lemon juice and rind. Cool; pour lemon filling into pastry shell.

5Make meringue and cover top of pie.
