- 2 1/4 c. sugar
- 2 1/4 c. water
- 3/4 tsp. salt
- 3/4 c. cornstarch
- 1/2 c. water
- 6 beaten egg yolks
- 3/4 c. lemon juice
- 4 1/2 Tbsp. butter
- 1 1/2 tsp. grated lemon peel
Directions

1Combine sugar, water and salt.

2Mix together cornstarch and 1/2 cup water and add to first mixture.

3Cook until thick. Combine egg yolks, lemon juice, butter and lemon peel.

4Add to first mixture and cook until thick again.

5Stir often.

6Add 2 tablespoons of prepared meringue to filling and pour into a baked pie shell.

7Top with remaining meringue and bake at 325° for 10 to 15 minutes until brown on top.
