  • 2 c. sugar
  • 1 c. butter or margarine
  • 3 eggs
  • 3 1/4 c. cake flour
  • 1/2 tsp. baking soda
  • 1 c. buttermilk
  • 2 Tbsp. grated lemon rind
  • 2 Tbsp. lemon juice

Directions

    Cream butter well with sugar. Beat in eggs, one at a time. Mix in flour and baking soda alternately with the buttermilk until blended. Stir in lemon peel and lemon juice. Spread in greased and floured 10 x 4-inch tube pan. Bake 1 hour in a preheated 325° oven.
