Lemon Pound Cake

  • 1 lb. butter
  • 6 eggs, beaten well
  • 3 oz. lemon extract (pure; use all)
  • 1/2 tsp. salt
  • 1 box white or dark raisins
  • 4 c. chopped pecans
  • 2 1/2 c. sugar
  • 4 c. plain flour (I use self-rising)
  • 1 1/2 tsp. baking powder
  • 1 small bottle cherries, drained

    Mix all this well and set oven at 300° for about 2 hours. Bake in angel food cake pan (10-inch pan).

    May take less time to cook due to oven.
