Lemon Pudding Cake

- 1/2 c. sugar
- 3 Tbsp. flour
- 1 tsp. finely shredded lemon peel
- 3 Tbsp. lemon juice
- 2 Tbsp. margarine, melted
- 2 slightly beaten egg yolks
- 1 c. milk
- 2 egg whites
Directions

1Combine sugar and flour.

2Stir in lemon peel, juice and margarine.

3Combine yolks and milk.

4Add to flour mixture; stir until all combined.

5Beat egg whites until stiff peaks form. Gently fold egg whites into lemon batter.

6Transfer batter to a 1-quart casserole dish.

7Place on oven rack in a larger pan.

8Add hot water to oven pan 1-inch deep.

9Bake in a 350° oven for about 40 minutes or until golden.
