- 3 Tbsp. margarine
- 1 c. sugar
- 1/4 c. all-purpose flour
- 3 eggs, separated
- 2 tsp. grated rind
- 1/4 c. lemon juice
- 1 1/2 c. milk
- 1/4 tsp. salt
Directions

1Cream butter, 1/2 cup of sugar and flour in mixing bowl.

2Add egg yolks; beat well.

3Stir in lemon juice, rind and milk.

4Add salt to egg whites and beat until stiff.

5Gradually beat in remaining 1/2 cup sugar; fold into first mixture.

6Pour into buttered baking dish; set in shallow pan of water 1-inch deep. Bake at 325° for 1 hour.
