- 1/2 c. chicken stock
- 1/2 c. water
- 1/2 c. long grain rice
- 1 1/2 Tbsp. lemon juice
- 1 Tbsp. cilantro or parsley, chopped
Directions

1Combine stock and water in a saucepan over medium-high heat. Stir in rice and pepper to taste and bring to a boil.

2Immediately reduce heat to low.

3Cover and simmer 20 minutes or until rice is tender and liquid is absorbed.

4Remove from heat and let sit 5 minutes, covered.

5Sprinkle lemon juice over rice.

6Add cilantro and fluff with a fork.
