- 1 cup chicken broth
- 1 cup water
- 1 cup long grain rice
- 2 -3 tablespoons lemon juice
- 2 tablespoons parsley, chopped
Directions

1Combine broth and water in a saucepan over medium-high heat.

2Stir in rice and pepper to taste and bring to a boil.

3Immediately reduce heat to low.

4Cover and simmer 20 minutes or until rice is tender and liquid is absorbed.

5Remove from heat and let sit 5 minutes, covered.

6Sprinkle with lemon juice and parsley and fluff with a fork.
