- 1 large lemon
- 1/2 tsp. salt
- 1/4 tsp. ground turmeric
- 1 c. parboiled rice
- 2 1/4 c. water
Directions

1Grate peel and squeeze juice from lemon.

2In 2-quart saucepan over high heat, heat lemon juice, salt, turmeric and water to boiling.

3Stir in rice; heat to boiling.

4Reduce heat to low; cover and simmer 20 minutes.

5When rice is done, stir in grated lemon peel.
