- 1 whole Lemon Zested, And Cut Into Wedges
- 1 teaspoon Salt
- 1 sprig Fresh Rosemary, Leaves Removed From The Stem
- 1 pound Sirloin Or Other Steak, Your Choice
- 1 Tablespoon Olive Oil
- 1 clove Garlic
- Arugula, For Serving (optional)
Directions

1Combine the lemon zest, garlic, and rosemary leaves on a cutting board.

2Chop the ingredients together to form fine crumbs.

3Drizzle the steak with the olive oil, sprinkle with the salt, then sprinkle both sides of the steak with the rosemary mixture.

4Press the coating into the steak with your hands.

5Let the steak rest for 15 minutes (or longer in the fridge if you have time).

6To cook, preheat a grill pan or grill to medium-high heat.

7Add steak to the hot grill.

8Grill on both sides, turning only once, until the meat develops a nice crust or grill marks.

9For 1-inch steaks, 4 minutes on each side is usually perfect for medium-rare steak.

10Remove steak from the grill and allow it to rest for at least 10 minutes, then thinly slice against the grain.

11Serve with lemon wedges and arugula, if using.
