Lemon Salmon Salad

  • 4 ounces, weight Salmon Filet
  • 1 dash Salt
  • 1 dash Pepper
  • 2 cups Arugula/Spinach Mix
  • 1 whole Small Orange, Sectioned
  • 1/4 cups Almonds, Chopped
  • 1 whole Lemon, Juiced
  • 1 teaspoon Olive Oil
  • 1 dash Salt
  • 1 dash Pepper

Directions

    Prepare salmon on the stovetop on medium high heat. I seasoned mine with a dash of salt and pepper. Cook for ten minutes, flipping halfway through.

    On a plate, add the greens, orange sections, and almonds.

    In a small bowl, stir together lemon juice, olive oil, salt, and pepper.

    Once salmon is cooked, chop it and add it to the salad. Drizzle the lemon juice mixture over top of salad and toss.
