Ingredients
- 1/4 c. flour or 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 c. sugar
- 3 egg yolks, well beaten
- 1/4 c. lemon juice
- 1 1/2 c. milk
- 1 Tbsp. grated lemon rind
- 3 egg whites, stiffly beaten
Directions

1Sift together the first 3 ingredients.

2Blend together the egg yolks, lemon juice, milk and lemon rind.

3Combine liquid with dry ingredients; beat until mixed.

4Fold in the egg whites, stiffly beaten.

5Pour into greased casserole and place in pan of hot water.

6Bake in slow oven at 325° for 45 minutes.

7Serve warm or cold.
