- 3 oz. pkg. lemon flavor gelatin
- 1 1/2 c. boiling water
- 1/2 c. sugar
- 1 c. water and ice cubes
- 1 Tbsp. lemon juice
- 1 Tbsp. lemon rind
Directions

1Dissolve gelatin in boiling water.

2Add sugar and stir until dissolved.

3Add water and ice and stir until ice is melted.

4Stir in lemon and rind; pour into 9 x 13-inch pan.

5Freeze until crystals form, about 1 inch from edge of pan, 1 to 2 hours.

6Spoon mixture into chilled blender or food processor and blend at high speed until smooth, about 30 seconds. Pour into 9 x 5-inch loaf pan and freeze firm, 6 hours or overnight.
