- 8 ounces egg noodles
- 2 tablespoons olive oil
- 1 lb spinach, fresh, stems removed
- 14 cup lemon juice, fresh
- 14 teaspoon salt
- 14 teaspoon red pepper flakes
- 4 tablespoons parmesan cheese, grated
Directions

1Boil pasta as directed on package.

2In the meantime, heat olive oil in large pan.

3Add spinach and cook until wilted (about 2 minutes) - stirring all the while.

4Add lemon juice, salt and red pepper flakes and stir again.

5Stir in noodles.

6Toss with Parmesan cheese and serve.

7(about 1 1/2 Celsius per serving).
