  • 8 ounces egg noodles
  • 2 tablespoons olive oil
  • 1 lb spinach, fresh, stems removed
  • 14 cup lemon juice, fresh
  • 14 teaspoon salt
  • 14 teaspoon red pepper flakes
  • 4 tablespoons parmesan cheese, grated

Directions

    Boil pasta as directed on package.

    In the meantime, heat olive oil in large pan.

    Add spinach and cook until wilted (about 2 minutes) - stirring all the while.

    Add lemon juice, salt and red pepper flakes and stir again.

    Stir in noodles.

    Toss with Parmesan cheese and serve.

    (about 1 1/2 Celsius per serving).
