- 2 eggs, separated
- 1 c. milk
- 3 Tbsp. flour
- 1 c. sugar
- juice and rind of lemon
- pinch of salt
- 1 Tbsp. butter, melted
Directions

1Mix the sugar and flour and add the lemon juice and rind, slightly beaten egg yolks, butter and salt.

2Stir in the skim milk and mix well.

3Beat egg whites until stiff and fold into the first mixture.

4Pour into custard cups and bake or the sponge may also be baked in a pie shell.

5Bake at 350° for 40 minutes.
