  • 1 c. hot milk
  • dash of salt
  • 3 eggs
  • rind of 1 lemon
  • juice of 2 lemons
  • 1 Tbsp. melted butter

    Combine sugar, flour, salt and egg yolks; beat.

    Add juice and rind; stir in milk.

    Fold in beaten egg whites.

    Bake at 420° for a few minutes, then at 350° for 35 minutes.
