- 1 c. all-purpose flour
- 1/4 c. sifted powdered sugar
- 1/2 c. margarine, melted
- 2 Tbsp. all-purpose flour
- 1/2 tsp. baking powder
- 2 eggs, beaten
- 1 c. sugar
- grated rind of 1 lemon
- 3 Tbsp. lemon juice
- powdered sugar
Directions

1Combine 1 cup flour and 1/4 cup powdered sugar; add margarine, mixing well.

2Spoon into a 9-inch square baking pan; press into pan evenly.

3Bake at 350° for 18 to 20 minutes, or until lightly browned.

4Combine 2 tablespoons flour and baking powder; set aside.

5Combine eggs, sugar, lemon rind and lemon juice; beat well.

6Stir dry ingredients into egg mixture and pour over baked crust.

7Bake at 350° for 25 minutes or until lightly browned and set.

8Sprinkle lightly with powdered sugar.

9Let cool; sprinkle again with powdered sugar and cut into 1 1/2-inch squares.
