Ingredients

  • 1/2 cup unsalted butter (room temp)
  • 1/4 cup icing sugar
  • 1 cup all-purpose flour
  • 1/8 tspn salt
  • 1 cup granulated sugar
  • 2 eggs
  • 1/3 cup fresh lemon juice
  • 1 tbsp grated lemon zest
  • 2 tbsp all-purpose flour

Directions

    Preheat oven to 350F and Line an 8x8 square baking pan with foil and spray with nonstick cooking spray

    Using an electric mixer beat the icing sugar and butter until creamy
  3. 3
    add flour and salt and beat until dough looks crumbly
  4. 4
    Press this into the bottom of your pan and pregame it for about 18-20 mins or until the sides start to brown a bit

    Remove from oven and place pan on cooling rack to cool while you prep your filling

    For the filling in a mixer add the sugar and eggs and beat until smooth.

    Next add the lemon juice and zest and combine that

    Fold in the flour and pour filling over shortbread crust

    Bake for about 20 minutes or until filling is set

    Allow to cool for a couple hours before cutting into square and dust with powdered sugar for a nice touch!
