- juice of 3 lemons
- rind of 2 lemons, grated
- 3 eggs, separated
- 12 tart shells, unbaked
Directions

1Cream the butter, sugar and salt. Add lemon juice and rind. Add egg yolks, slightly beaten.

2Fold in stiff egg whites.

3Pour into unbaked tart shells.
