- 1/2 c. unsalted butter
- 1 c. sugar
- 2 eggs, lightly beaten
- grated peel of 1 lemon
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/2 c. milk
- Lemon Syrup
Directions

1Cream together butter and sugar until light.

2Add eggs, beating well after each addition.

3Add lemon peel.

4Sift together flour and baking powder.

5Add alternately the milk and flour to creamed mixture.

6Turn into well-greased 9 x 5-inch loaf pan.

7Bake at 375° for 45 minutes or until loaf springs back when lightly touched.

8Pierce top of hot loaf with tines of fork.

9Pour Lemon Syrup over cake.

10Let stand 10 minutes before turning out of pan. Chill.
