- 40 Ritz crackers
- 4 egg whites
- 1/2 tsp. vinegar
- 1/4 tsp. cream of tartar
- 1 c. sugar
- 1 can lemon pie filling
- 1/2 c. melted butter
Directions

1Crush crackers; add butter.

2Press into a 13 x 9-inch pan. Beat egg whites, cream of tartar and vinegar until soft peaks form. Gradually add the sugar.

3Beat until you taste no grains of sugar. Spread on cracker crumbs.

4Bake at 400° for 15 minutes or until it turns light brown.

5Cool.

6Spread with lemon filling.

7Top with whipped cream.

8I sometimes use 1 1/2 recipes for the schaum torte for a higher torte.

9This torte refrigerates well for a few days and so good.
