- 1/4 cup minced shallots
- 1/4 cup fresh lemon juice
- 1 tablespoon champagne vinegar
- 1 teaspoon kosher salt, plus more to taste
- 1/2 cup extra-virgin olive oil
- 1/2 teaspoon freshly ground black pepper, plus more to taste
Directions

1Combine the shallots, lemon juice, vinegar, and salt in a small bowl.

2Set the bowl aside for 5 to 10 minutes to marinate the shallots.

3Add the olive oil in a slow, steady stream, whisking constantly to combine.
