Lemon Walnut Muffins

  • 1 c. sugar
  • 1/2 c. softened butter or margarine
  • 2 eggs
  • 1 c. plain yogurt or 7/8 c. buttermilk
  • 2 Tbsp. grated lemon peel
  • 3/4 tsp. salt
  • 1 tsp. soda
  • 1 1/2 c. coarsely chopped walnuts
  • 2 c. all-purpose flour

Directions

    Cream the sugar and softened butter or margarine until pale and fluffy. Beat in the eggs, one at a time, then the yogurt or buttermilk, lemon peel, salt, soda and walnuts.

    Gradually add the flour, mixing until well blended.

    Spoon into greased or paper lined 2 3/4-inch muffin cups. Bake at 375° for 18 to 20 minutes until springy to the touch.
