Lemon Walnut Muffins

- 1 c. sugar
- 1/2 c. softened butter or margarine
- 2 eggs
- 1 c. plain yogurt or 7/8 c. buttermilk
- 2 Tbsp. grated lemon peel
- 3/4 tsp. salt
- 1 tsp. soda
- 1 1/2 c. coarsely chopped walnuts
- 2 c. all-purpose flour
Directions

1Cream the sugar and softened butter or margarine until pale and fluffy. Beat in the eggs, one at a time, then the yogurt or buttermilk, lemon peel, salt, soda and walnuts.

2Gradually add the flour, mixing until well blended.

3Spoon into greased or paper lined 2 3/4-inch muffin cups. Bake at 375° for 18 to 20 minutes until springy to the touch.

4Makes 18 muffins.
