  • 4 lb. hams
  • 1 c. packed brown sugar
  • 1/2 c. butter, softened
  • 1/2 tsp. salt
  • 2 tsp. grated orange
  • 2 tsp. lemon rind, grated

Directions

    Cook unpeeled whole yams in boiling water for 30 minutes or until tender; drain.

    Peel and mash until

    If dry, add a little hot water.

    Add remaining ingredients and beat until light and fluffy.

    Transfer to a greased 2-quart casserole dish and bake for 30 minutes at 350°.
