- 1 c. packed brown sugar
- 1/2 c. butter, softened
- 1/2 tsp. salt
- 2 tsp. grated orange
- 2 tsp. lemon rind, grated
Directions

1Cook unpeeled whole yams in boiling water for 30 minutes or until tender; drain.

5Add remaining ingredients and beat until light and fluffy.

6Transfer to a greased 2-quart casserole dish and bake for 30 minutes at 350°.
