  • 4 -5 small zucchini, boiled and sliced
  • 2 tablespoons chopped mild onions or 2 tablespoons chopped shallots
  • 2 tablespoons butter
  • 12 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 18 teaspoon herbes de provence (I use a bit more, probably more like 1/4 t)

    Boil and slice zucchini.

    Drain well.

    Cook shallots and butter on low heat.

    When shallots are tender, add lemon peel and juice to pan.

    Cook slowly for 2 minutes.

    Add zucchini to pan and mix well.

    Cook until all is heated.
