Ingredients
- 4 -5 small zucchini, boiled and sliced
- 2 tablespoons chopped mild onions or 2 tablespoons chopped shallots
- 2 tablespoons butter
- 12 teaspoon grated lemon peel
- 2 tablespoons lemon juice
- 18 teaspoon herbes de provence (I use a bit more, probably more like 1/4 t)
Directions

1Boil and slice zucchini.

2Drain well.

3Cook shallots and butter on low heat.

4When shallots are tender, add lemon peel and juice to pan.

5Cook slowly for 2 minutes.

6Add zucchini to pan and mix well.

7Cook until all is heated.
