  • 1 None lemon, zest peeled and cut into thin strips
  • 1/2 cup granulated sugar
  • 1 tbsp citric acid
  • 2 tsp cream of tartar
  • 1 1/4 cups lemon juice
  • None None soda water or ice water, for serving

Directions

    For lemon syrup, combine lemon zest, sugar, citric acid and cream of tartar. Add 8 cups boiling water and stir until sugar dissolves. Add lemon juice then let cool. Strain.

    To serve, dilute lemon syrup with soda water (or ice water) to taste.
