- 2 boneless, skinless whole chicken breasts
- 1 Tbsp. all-purpose flour
- 2 tsp. olive oil
- 1/3 c. chicken broth
- 2 Tbsp. drained capers
- 1 Tbsp. parsley
Directions

1Coat chicken with mixture of flour, salt and pepper.

2Heat oil in skillet over medium heat.

3Add chicken and cook for 6 to 8 minutes, turning once, until lightly brown and no longer pink in center.

4Remove to serving platter or dinner plates.

5Add chicken broth and lemon juice to skillet.

6Stir over medium-high heat 2 to 3 minutes, scraping up any brown bits in pan until sauce is reduced slightly.

7Stir in capers and parsley.

8Pour over chicken.

9Serve over noodles with sauteed bell pepper (green and red) strips.
