Lentil and Quinoa Soup

  • 4 garlic cloves, minced
  • 2 cups chopped onions
  • 2 cups chopped carrots
  • 1 cup chopped celery
  • 1 12 cups dried brown lentils
  • 1 tablespoon dried Italian seasoning
  • 1 (28 ounce) can crushed tomatoes
  • 8 cups chicken broth
  • 1 cup quinoa, rinsed
  • 2 tablespoons balsamic vinegar
  • salt and pepper

Directions

    In large pot, combine garlic, onion, carrot, celery, lentils, seasoning, tomatoes and broth.

    Bring to a boil.

    Reduce heat and simmer for 35 minutes.

    Stir in quinoa and simmer 15-20 minutes, until tender.

    Stir in vinegar.

    Season to taste with salt and pepper.
