- 4 oz. uncooked lentils
- 1 1/2 qt. water
- 1 c. diced onions
- 1 c. diced carrots
- 1 c. diced celery
- 1/2 c. tomato juice
- 1 Tbsp. plus 1 tsp. olive oil
- 1 Tbsp. minced fresh garlic
- 4 c. chopped escarole
Directions

1Add bouillon granules to taste.

2Rinse lentils well and place in large pot with water; bring to a boil; reduce heat, cover and simmer 40 minutes.

3Add remaining ingredients except escarole. Simmer until vegetables and lentils are just tender, about 20 minutes.

4Add escarole and simmer 15 minutes longer.

5Serve immediately.
