Ingredients

  • 4 oz. uncooked lentils
  • 1 1/2 qt. water
  • 1 c. diced onions
  • 1 c. diced carrots
  • 1 c. diced celery
  • 1/2 c. tomato juice
  • 1 Tbsp. plus 1 tsp. olive oil
  • 1 Tbsp. minced fresh garlic
  • 4 c. chopped escarole

Directions

    Add bouillon granules to taste.

    Rinse lentils well and place in large pot with water; bring to a boil; reduce heat, cover and simmer 40 minutes.

    Add remaining ingredients except escarole. Simmer until vegetables and lentils are just tender, about 20 minutes.

    Add escarole and simmer 15 minutes longer.

    Serve immediately.
