Ingredients

  • 3 tablespoons olive oil
  • 1 finely chopped onion medium
  • 3 carrots in one inch chunks
  • 3 celery one inch chunks
  • 2 garlic cloves finely chopped
  • 1 pound lentils
  • 1/2 cup red wine
  • 1/2 teaspoon cumin
  • 5 cups chicken broth
  • 1 teaspoons paprikah
  • 1 teaspoons oregano
  • 2 bay leaves

Directions

    Cook onions, celery, garlic , and carrots 6 min. or until softened

    Stir in lentils and liquids and spices and cook for 30-45 minutes.

    Puree some of the soup with immersion blender to thicken if desired.
